Mississippi Mud Cake


Sometimes you just gotta be bad and if you gonna be bad, you must be really bad!  If I am gonna cheat a little and have chocolate, I am going all out!!  My sweet hubby's birthday arrived and I decided to kick it up a notch and make him something really special!  So.......



Mississippi Mud Cake
Ingredients
  • +For the Cake
  • 2 cups sugar
  • 1/2 teaspoon salt
  • 2 cups flour
  • 1/2 cup of unsalted butter
  • 1/2 cup of canola oil
  • 1/2 cup of dark cocoa
  • 1/4 cup of water
  • 2 eggs
  • 2 teaspoons of vanilla
  • 1 teaspoon baking soda
  • 1/2 cup of buttermilk
  • 1 10 oz bag of miniature marshmallows
  • +For the Frosting
  • 1/2 cup of unsalted butter
  • 3 well rounded tablespoons of dark cocoa
  • 7 tablespoons of milk
  • 1 lb bag of powdered sugar
  • 1 cup of chopped pecans
  • 2 tablespoons of vanilla
Instructions
1. Preheat oven to 350 degrees
2. In a large mixing bowl, mix sugar, salt and flour
3. In a small saucepan, bring the butter, oil, cocoa and water to a boil. Slowly blend into the flour mixture.
4. In a small mixing bowl, beat the eggs, baking soda, buttermilk and vanilla, add to the chocolate batter mixture.
5. Pour into a greased 13 X 9 inch baking pan and bake for 30 minutes.
6. Cover the cake with the miniature marshmallows
7. Meanwhile make the frosting by melting the butter, cocoa and milk over low heat, stir in the powdered sugar then add the vanilla
8. Drizzle over the marshmallow topped cake. Sprinkle with the chopped pecans. Let cool before serving

  2. Hey, I don't know why that's so bad. After all, look at all those pecans. Surely that protein balances off the sugar, right???! LOL We all like to indulge once in a while, and this looks like a great recipe to indulge in! Thanks. :-)
