I love fresh veggies! It is amazing the difference in taste of canned green beans and fresh. Not to mention the difference of sodium levels. I can make these green beans in about the same amount of time required to heat a can of green beans.
Stir Fry Thai Green Beans
3 Cups of fresh Green Beans (about a handful per person)
2-3 dried Thai red Chiles
1 Tablespoon Olive Oil
1 clove of garlic, crushed
salt and pepper to taste
Heat the olive oil in a wok or large skillet. Add the crushed Thai Chiles and green beans and stir fry until almost done (about 5-6 minutes), add the crushed garlic and stir fry for 1-2 minutes longer. Salt and pepper to taste. Serve with Turkey Meatloaf and Lighter Mashed Potatoes.
