I grew up on canned green beans, I know that’s not bad and we still use them but there is nothing like the gorgeous color and flavor of fresh green beans.
We never had extra money when I was a kid, my parents struggled and my mom spent money frugally, very very frugally. Usually, she would stock up on canned veggies when she found a great sale and it seemed like green beans were always on sale. I wasn’t crazy about them when I was a kid, pale green beans that always tasted a little too salty for me and mom didn’t always have the extras to flavor them.
At times we lived where we were able to plant a garden and mom would plant green beans. We would help mom pick green beans and she would preserve them in Mason glass canning jars. And they were better but still a little overcooked for my appetite.

So I never developed a love of green beans until I was grown and discovered pan fried green beans. You know, just a flash stir-fry leaving the green beans cooked and still crisp-tender.

Our favorite way to cook fresh green beans are these stovetop green beans. Either way, this is an easy recipe that really brings out the flavor of fresh green beans.

Ingredients:

4 cups green beans, ends cut off
-
3 Tablespoons butter
-
2 Tablespoons olive oil
-
1/3 cup slivered almonds, or more to personal preference

1-2 Tablespoons lemon juice, personal taste

Salt, as needed

In a large pot add water and boil over high heat, add salt and then the green beans. Cook the green beans for only 2-3 minutes, until you reach your desired level of doneness. Do not overcook, the green beans should be done but not limp. Drain and rinse to stop cooking process. Meanwhile melt the butter and olive oil together in a cast iron skillet over medium heat.

As soon as your butter melts and is hot add the slivered almonds. Toast the almonds for 2-4 minutes, and stir occasionally. You can toast until just lightly beige or until golden brown.

Toss the cooked green beans into the skillet and pan fry with the butter, oil and almonds until they are hot and fully coated.

Do not over cook, they should still be soft but not limp. Remove your cast iron skillet from the heat and add lemon juice.

Serve immediately. These pan fried green beans with toasted slivered almonds are gorgeous and so healthy and they are rocking all those natural flavors.
