Cherry Squares with Cream Cheese Glaze

Make these Cherry Squares topped with a homemade cream cheese glaze for a great dessert or snack.   This easy Cherry Square recipe uses canned cherry pie filling.

Now what could be more American than apple pie?  Cherry squares that’s what.  These scrumptious treats are one of our favorite pastries and it’s one of the easiest to make.  There is no reason to go out and buy a mix nor a prepackaged pastry.  You can have make your own with this Cherry Square recipe.  And it’s topped with a cream cheese glaze that is out of this world.

These cherry square is made using a homemade recipe and can be ready to eat in under an hour.  You could serve these cherry squares for breakfast, brunch, after school snack or even as a dessert.  

 

What is in this Cherry Square recipe:

  • 1 ½ cups flour
  • ½ teaspoon salt
  • 1 stick unsalted butter, softened to room temperature
  • ½ cups sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 21-ounce can cherry pie filling

Ingredients for the cream cheese glaze:

  • 2 ounces cream cheese, softened
  • ½ cup powdered sugar, sifted
  • ½ teaspoon vanilla extract
  • 2 to 3 tablespoons milk

How to Make Cherry Squares:

Preheat your oven to 350 degrees and grease a 8×8 baking pan with nonstick cooking spray .  In a medium size bowl, combine the flour and salt then set aside.

Beat the butter and sugar together until light and fluffy. Add the eggs and vanilla extract and beat to combine completely.

Add the dry ingredients into the butter egg mixture and mix until very well combined.

Spread about two-thirds of the batter over the bottom of your 8 X 8 pan.  Use your fingers to press the dough into the pan, making sure the dough is spread evenly.

Pour the cherry pie filling over the prepared batter and gently spread evenly.

Spoon the reserved crust dough over the top of the pie filling in pieces.  Bake in the preheated oven for 30 to 35 minutes, until the top crust is golden brown and the filling is bubbling.  Remove the pan of cherry squares from the oven and place on rack to cool. 

 

To make the cream cheese glaze:

While the cherry squares are cooling, make the glaze by beating together the cream cheese, powdered sugar, vanilla extract, and two tablespoons of milk until smooth. Add more milk if needed.

When it is cooled completely, drizzle the cream cheese glaze over the top and cut into nine squares.

 

 

Serve each cherry square straight from the pan. They will stay fresher and more moist by leaving them in the pan.

I made this, pretty easy, except 10 minutes before it was due to come out, I heard a a crash, the 9x13 pyrex pan started cracking and breaking in the oven! The pan was literally cracking and falling apart bit by bit as I was trying to take out the unfinished cake...what a MESS! I don't know what happened, the temp was exactly as noted...I was able to test it, where the pan remained whole, broke my heart, it tasted great - but sadly had to toss it in the trash

I'm so sorry to hear about your pan fail. I'm not sure why it happened, pyrex pans are usually very trustworthy. I do use a metal pan when I make these.

Can you double the recipe and put in a 9 x 14 pan?
