Sweet Potato Fries

I believe I can eat healthy and still enjoy cooking and eating great food. I believe I can have my "junk food" and eat it without repercussions.  I believe most recipes can be "tweeked" to make them more nutritious without losing the great flavor we love.   I believe I can still have my favorite dishes with fewer calories  just by changing the manner in which they are prepared.  Yep, I'm a believer!      And I believe I am in Love with the Sweet Potato!    I love them baked whole (no butter needed), I love them mashed, and I especially love them turned into "Fries"!!    I believe and know Sweet potatoes are loaded with Vitamin A and are a healthier choice vs regular potatoes.   And I believe when you make these Sweet Potato Fries, you will NOT feel cheated, in fact I bet you would choose these over regular fries!!   So this is my way of having fries but without all the calories and guilt of deep fried potato fries!  
 I believe you will think they are GREAT and you would be correct, they ARE!!   I so BELIEVE!!     

Sweet Potato Fries

  • Sweet Potatoes, peeled and sliced into fries (1 potato for each serving)
  • Corn starch (for crisper fries)
  • Salt and Pepper
  • Olive oil
  • Parsley, optional (for garnish)
1. Preheat oven to 425 degrees
2. Place cut sweet potato fries in a large ziplock bag
3. Sprinkle with just enough corn starch to light coat the fries
4. Liberally salt and pepper, to taste
5. Add olive oil to coat all the fries
6. Spread fries on a cookie sheet in a single layer
7. Bake for 15 minutes, flip and bake for 15 additional minutes until potatoes are browned
8. Sprinkle with sea salt and parsley
9. Serve with ketchup, optional
