I am excited to be over at my bloggy friend, Evelyn's place today. I don't have to tell y'all the she is awesome!! I just love her! When my family moved across the country from North Carolina to Arizona recently, we had the privilege to meet her and Lee! Seriously, she was even more fun in person! She recently told me that she has never had a guest post on her blog and I couldn't believe it - and I feel so honored that I get to be the first one! I gave Evelyn the choice of what to share with y'all .... and I really think she made a great choice! ;)
As many of you know, Evelyn has been working hard to lose some weight! I couldn't be more thrilled for her when I hear about her success! I just love that she has shared her journey with us and has motivated others into being more healthy!
On that note, today, I am sharing a Shrimp Scampi with Pasta .... it's super quick and easy. With only about 7 calories per shrimp, this is great for people who are watching the caloric intake.
I wouldn't go as far as saying I love seafood, but I do enjoy it on occasion. My husband, Brian, on the other hand, hates seafood. Period. It's a no go. He will never eat it ... ever. Even if I try to hide it. (Who me?!)
Brian travels a lot for his job, so there are nights that he is not home for dinner. Those nights are about the only time we really get a chance to eat shrimp or fish. Don't get me wrong, I'm not complaining and I totally get his preference ... a lot of people don't like seafood. I just save dishes like this Shrimp Scampi with Pasta for those nights when I know he won't be joining us or I make him something else! :)
This has to be one of the fastest and easiest cooked meals I know! It takes longer for the water to boil and for the pasta to cook than it does for the Shrimp Scampi. Seriously! It's lightening fast ... and it's even great for company! Such an impressive dish with so little work!
1 lb. large shrimp, shelled and de-veined, with tails on
Salt to taste
½ cup white wine
2 tbsp. finely chopped parsley
Pepper to taste
1 tbsp. lemon juice
Pasta, cooked according to pkg. directions
In a large skillet, add the oil and butter. Heat over medium-high heat and add the garlic and red pepper flakes. Saute for a minute or two or until the garlic becomes fragrant and starts to brown. Add the shrimp to the pan. Add salt to taste and the wine; stir to coat. Raise the temperature to high and allow to boil for 2-3 minutes. Stir the shrimp so most of the cooked sides are facing up. Allow to cook for an additional minute or two. Remove from the heat and add the parsley. Toss to combine. Add the pepper and lemon juice. Serve over pasta with remaining wine sauce in the pan.
