Slow Roasted Tomatoes

I am not sure I can explain exactly how delicious these Slow Roasted Tomatoes are, in fact I was totally blown away.   They are just amazing and literally packed with huge, huge  flavor.
These Slow Roasted Tomatoes are seasoned with Italian herbs and slow roasted to bring out that intense flavor.
It may take an afternoon to roast them, but the labor is very minor and once you and your family try them, you will be so glad you took the extra time to slow roast these tomatoes. 
Use Roma tomatoes for the more intense flavor, we all love a great beefmaster sliced tomato on hamburgers and sandwiches but for sauces you really can’t beat a Roma tomato.
Slow Roasted Tomatoes
  • 12-15 Roma Tomatoes
  • 1 Tablespoon of dried basil
  • 1 Tablespoon of dried oregano
  • 3 cloves of garlic, crushed
  • pinch of salt
  • 2 Tablespoons of olive oil
1. Heat oven to 225 degrees F
2. Cut the Roma tomatoes in half lengthwise (from stem down)
3. Place the cut tomatoes in a large bowl
4. Add basil, oregano, garlic, salt and olive oil
5. Mix well, gently turning the tomatoes until all are coated with herbs and olive oil
6. Place cut side up on a rimmed baking pan
7. Bake in oven for 5-6 hours

I also prefer Roma when roasting ! Love the Italian spin on these :-)
