Hello to all Evelyn's readers !
Linda here from WITH A BLAST and I am super excited to be guest posting at MY TURN FOR US.

Our family loves all kinds of cuisine but Mediterranean is on the top list. All the dishes are so colorful and bursting with flavor.
Mediterranean + Shrimp + Pasta = always a winner in my book and that is why I decided to share this Mediterranean Shrimp Pasta with you today.
You might notice that I have a heavy hand with the Feta - feel free to use less {or more if you so wish!}. Simple reason for that, we are addicted to cheese, any kind and the more the better.

MEDITERRANEAN SHRIMP PASTA
Serves : 4 INGREDIENTS:
1 TB Light Olive Oil 2 t Garlic, crushed
500g Medium Shrimp, peeled and deveined
2 cups Italian Tomatoes, chopped
1/4 cup Fresh Basil, chopped
1/3 cup Kalamata Black Olives, chopped
Freshly Ground Black Pepper
350g {raw weight} Angel Hair Pasta, cooked
1/4 cup Low-Fat Feta Cheese, crumbled/cubed

 DIRECTIONS:
1.) Heat the Olive Oil and saute the Garlic 1 minute - add the Shrimp and cook 3 minutes or until pink.
2.) Add the Tomatoes and Basil - cook another 3 minutes until the Tomatoes are just tender.
3.) Remove from the heat - stir in the Olives and season with Black Pepper.
4.) Combine the Pasta and the Shrimp - toss well. Sprinkle with the Feta Cheese and serve immediately.  Add some more Black Pepper if you prefer.

Evelyn, I wish I could have participated, but I've gotten a promotion at work that is causing my schedule to be unpredictable.
