Salsa with Baked Chips

Salsa is one of life's great creations in my house, it's a perfect low calorie garnish for just about everything.  Pair it with some healthier baked tortilla chips and enjoy this pleasure without the guilt or wrecking your diet! 
I have been trying to make the perfect salsa for years but something is always not quite right.   But today, everything just worked and this salsa is the best I ever made!    The secret is roasted jalapeños!  

Salsa with Baked Chips
  • 1 14oz can of chopped tomatoes
  • 1 can 10 oz can of Rotel
  • 1/4 cup of chopped onion
  • 2 roasted jalapeños, chopped
  • 1 clove of garlic, minced
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of cumin
  • 1/4 cup of cilantro
  • juice of 1 lime
1. Using a food processor or blender, blend all ingredients to the desired consistency.

Baked Tortilla Chips

  • 10 corn tortillas, cut into fourths (a pizza cutter is great for cutting these)
  • Cooking Spray
  • Salt to taste
1. Heat oven to 350 degrees
2. Spray a cookie sheet with the cooking spray
3. Place tortilla fourths in a single layer on sheet, spray the tops of the chips and salt to taste.
4. Bake for 12-14 minutes turning the chips about half way through. Bake until crisp

* Roasted Jalapeños-place fresh jalapeños on grill on med high heat (I use a stove top grill) and continue to turn until all sides are charred.  Place in a brown paper bag for just a few minutes to steam.   Remove from bag and peel.  Use in all your dishes or just as a accompaniment, the roasting gives the peppers a great smoky flavor.

    1. Anne..if no one has answered your question. Rotel is a brand of tomatoes with green chilies and seasonings already in the can. You will find them in the Mexican food aisle and/or in the canned tomato sections of your grocer. I have used them for years to make my salsa and queso dip.
