Lighter Mashed Potatoes

Potatoes are not a total taboo food when on a healthy journey:)
Cooked properly, they bring much needed nutrients and satisfaction to your diet.

Its usually not the potato itself that gives it the bad rap.  It's the butter, sour cream and heavy cream that we pile in and on it.  
A lighter butter and fat free milk enhance the great flavor of these potatoes without adding extra fat and calories.   

Lighter Mashed Potatoes

  • 1 lb of red potatoes
  • 1 Tablespoon of lite butter spread
  • 1/2 cup skim milk
  • salt and pepper to taste
1. Cut the potatoes into 1-2 inch pieces and bring a pot of lightly salted water to a boil, add potatoes and cook until fork tender. (about 10 minutes)
2. Drain and place back into the pot, add milk, butter spread, salt and pepper. 3. Mash using a potato masher until the desired consistency is obtained.

  8. That looks great! I want to eat that plate right now! I love potatoes, even without butter & salt. I like them with chili or salsa. Ive even ate them with cottage cheese. Sounds gross but it's goodi swear!

  15. Yumm! We don't eat mashed potatoes often, but my husband still makes them just because I love them. But, he does use them to thicken gravy, instead of flour. Just slice a potato and bake with roast, then mash it up when you're making gravy from the pan juices. Yumm.
