Simple to make with canned biscuits, they’re ready in about 25 minutes and great for meal prep too. Your family will love grabbing one as they head out the door! We used fresh ingredients in our breakfast hand pies but also tried to make them as easy as possible.  So we used  canned biscuits that are rolled into a flat circle of dough, topped it with bacon, eggs and cheese and folded them over.  They are then baked in the oven until the biscuit dough is cooked. 

Breakfast Hot Pocket Recipe:

Butter, biscuits, bacon, eggs

Ingredients:

  • 1 5-count package biscuit dough (I used Pillsbury Butter Tastin’)
  • 1 tablespoon butter
  • 4 large eggs
  • ¼ cup milk
  • 4 strips bacon, coarsely chopped
  • 3 slices cheese (I used American)
  • Salt and pepper

Equipment Needed:

  • Baking Sheet
  • Parchment Paper
  • Mixing Bowl
  • Medium Skillet
  • Rolling Pin

These handy breakfast pockets are perfect for meal prep! Here’s how to make them ahead of time and keep them tasting fresh:

  • Freezer: Baked pockets also freeze well. Cool completely, wrap individually in foil or plastic wrap, then store in a freezer bag for up to 2 months.

  • In a medium mixing bowl, whisk together the 4 large eggs, ¼ cup milk, salt, and black pepper until everything is well combined and slightly frothy. This helps create those light, fluffy scrambled eggs your family will love.

  • Heat a medium skillet over medium-low heat and add 1 tablespoon of butter. Once the butter has melted and is gently bubbling, pour in your whisked egg mixture.

  • Meanwhile, open the package of biscuit dough and separate the 5 biscuits. Place them on a lightly floured surface or a sheet of parchment paper.
  • Using a rolling pin, gently roll out each biscuit into a flat circle, about 5 to 6 inches across. You want them thin enough to fold easily but still thick enough to hold all that delicious filling. Don’t worry about making them perfectly round—rustic and homemade is what we’re going for!

  • Divide the scrambled eggs into 5 equal portions.
  • Take one flattened biscuit and place a generous portion of the scrambled eggs along one half of the circle, leaving a little border around the edge so you can seal it later.
  • Top the eggs with pieces of your chopped bacon—distribute it evenly so every bite has that wonderful smoky flavor.

  • Top the egg and bacon filling with half a slice of cheese. I like to tear or fold the ½ slice so it covers the eggs and bacon nicely. The cheese will melt beautifully as the pockets bake, holding everything together and adding that gooey, delicious touch everyone loves.

  • Next, use a sharp knife to cut 2–3 small vent holes in the top of each pocket. These vents allow steam to escape so your pockets stay crisp instead of getting soggy.
  • Repeat the filling, folding, sealing, and venting process with the remaining biscuits until you have a total of 5 delicious Bacon Egg Cheese Biscuit Pockets ready for the oven.

  • Place the stuffed breakfast pockets onto the prepared parchment-lined baking sheet, spacing them a couple of inches apart so they have room to bake evenly.
  • Carefully transfer the baking sheet to your preheated 375° F oven.
