These haystack no bake cookies are a fun spinoff from the movie, Buddy the Elf.   In the movie he eats spaghetti with syrup, candy plus other sweets which really doesn’t sound that appetizing.  But we have created a buddy the elf cookie that is fun and delicious using melted chocolate candy and chow mein noodles instead of spaghetti and syrup.  These little cookies are not only fun to make, they are delicious and super easy.

Perfectly sweet, delightfully crunchy, and easy to make, our Elf Spaghetti Cookies offer a unique treat for your Christmas celebrations. Elf Spaghetti Cookies Recipe:

Ingredients

  • 12 ounces chow mein noodles
  • 6 cups white chocolate or almond bark
  • 1/4 cup maple syrup
  • Red and green sprinkles

Equipment Needed:

  • Microwave safe bowl
  • Baking sheet
  • Parchment paper
  • Small spoon

🥣 Recipe Tips

  • Melt the white chocolate gently – Use the microwave in 20-second bursts, stirring well each time, or a double boiler. If it seizes up, add ½ teaspoon of neutral oil (like vegetable or coconut) and stir—it’ll smooth right out. Perfectly glossy “sauce” guaranteed!
  • Work fast once the chocolate hits the noodles – The coating starts to set quickly. Toss the chow mein noodles in the melted white chocolate, then immediately add your sprinkles, mini marshmallows, and candies while it’s still sticky. That way everything sticks like it’s supposed to—no sad toppings sliding off!
  • Go big with the maple “syrup” drizzle – Use real 100% pure maple syrup (not pancake syrup) and warm it slightly so it flows easily. For extra movie accuracy, pile the cookies high on the plate and go wild with the drizzle right before serving—bonus points if you drizzle it straight into someone’s mouth like Buddy!

How to make these buddy the elf cookies:

Place the white chocolate chips in a large microwave safe bowl and heat in 30 second intervals, stirring between each interval, until melted.

Add the maple syrup and chow mien noodles and gently  stir to completely coat the noodles with the chocolate.

Scoop out the mixture using a small spoon and transfer the cookies to a baking sheet lined with parchment paper.  Top each elf spaghetti cookie with red and green sprinkles.

Continue making the spaghetti cookies until all the mixture is used,  topping each with the red and green sprinkles. Allow the elf spaghetti cookies  to cool and harden at least 30 minutes before serving.
