This Easy Hamburger Vegetable Soup with potatoes is a total comfort meal. It’s a hamburger soup recipe that can be quickly made with ground beef, potatoes, seasonings, and veg-all vegetables.

Hamburger Vegetable soup is easy to make, just start with 1 lb of ground beef and 1 medium onion chopped. Brown the mixture in a dutch oven or soup pot until no longer pink.
We always use our Mix N’ Chop to break the meat down as it’s cooking, it makes it so much easier. Add the garlic and continue to cook for 1-2 minutes. Drain off fat if any and return the meat mixture to the dutch oven.
Add broth, tomatoes, Worchester, Italian seasoning and cubed potatoes and cook. Simmer on medium-high heat until the potatoes are fork tender about 20 minutes.
We also make our Hamburger soup with Veg-All canned mixed vegetables, these are such a time saver. All the vegetables for your soup are already cut and cooked for you. Add two cans of these mixed vegetables and cook for an additional 15 minutes. Or any mixed vegetable blend would work.

A rich meaty soup with ground beef and vegetables
In a large dutch oven or soup pot brown ground beef and minced onion until the meat is no longer pink. Add garlic and cook for 1-2 minutes. Drain fat if any.
Add broth, tomatoes, Worchester sauce, Italian seasonings, and potatoes. Simmer on medium heat for 20 minutes until potatoes are tender
Add Veg-All vegetables and cook for an additional 15 minutes
