Italian Skillet Eggs


 As most of you know, I have lost 21 pounds so far by eating healthy and exercising.  I believe you don't have to give up great flavor to lose weight and eat healthy. 
I have always enjoyed breakfast for dinner, and when I found this recipe, I couldn't wait to try it.  It's kinda a romantic dinner for two and can be ready in a jiffy and if its served with fruit, it can be a low carb/calorie dinner.  
   
 These Italian skillet eggs are awesome and I do hope you enjoy them. 



Italian Skillet Eggs


Ingredients
  • 2 Tablespoons of lite buttery spread
  • 1 cup of brown baby portobello mushrooms
  • 6 ounces of fresh baby spinach
  • 1 1/2 cups of chunky pasta sauce
  • 6 eggs
  • 1/4 cup low-fat Mozzarella cheese
  • 1 tablespoon fresh basil leaves
  • Freshly ground black pepper
Instructions
1. Melt 2 Tablespoons of buttery spread in a large skillet over medium high heat and cook the mushrooms, stirring occasionally, until golden, about 5 minutes.
2. Stir in spinach, cook until wilted, about 1 minute.
3. Stir in pasta sauce, heat thoroughly.
4. Add eggs one at a time, evenly spaced, pepper to taste and do NOT stir.
5. Cover and cook over medium heat until egg whites are set and yolks reach the desired doneness.
6. Sprinkle with cheese and basil before serving.

    I'm not familiar with "I Can't Believe It's Not Butter" but it sounds interesting.
    Is it butter-flavored margarine ?

  4. I'll replace the margarine with olive oil, and give this a try!
    Looks delicious ... but is it very liquid-y?
    I guess using hunks of crusty good Italian bread to soak up the sauce would not be very diet friendly, hahaha!
