Best Rum Cake Ever! NOT!!

It’s been told to me that this is the Best Rum Cake Ever.   We will see.   Come into my kitchen and enjoy this great recipe for a rum cake.

April Fool

I’m so excited to make this recipe with you.  I have never made it before and thought it would be fun today since I just bought plenty of rum.   You know I have been eating healthy and getting skinny and I decided today was the day I would cheat.   And this sounds like a great day to try it being April first and all.

So let’s get straight to the cake

Best Rum Cake Ever

2 quarts of rum (may need more)
1 cup butter
1 teaspoon sugar
2 large eggs
1 cup of dried fruit
1 teaspoon baking soda
1 teaspoon baking powder
lemon juice
nuts
Before you start, sample the rum to check for quality.  Good isn’t it?
Now go ahead and select a large mixing bowl, measuring cups, etc.
Check the rum again to be sure the rum is of the highest quality.

Pour one level cup of the rum in a glass and drink it as fast as you can. Repeat!

With an electric mixer beat 1 cup butter in a large fluffy bowl.
Add 1 seaspoon of thugar and beat again.
Meanwhile, make sure the Rum is of the highest quality.  Try another cup!
Sopen a second quart if necessary.  Add 2 arge leggs, 2 cups fried druit and beat till high.
If druit gets stuck in beaters, just pry loose with drewscriver.
Sample Rum again, checking for tonscilticity.
Next sife 3 cups of pepper or salt (it doesn’t really matter). Sample Rum again.
Sift 1/2 pint of lemon juice, fold in chopped butter and strained nuts.
Add 1 bobblespoon of brown thugar, or whatever color you can finbd.
Wix mel.
Grease oven and turn cake pan to 350 gredees.
Now pour whol mess into the cover and ake.
Check the Rum again and bo to ged.

Disclaimer:  Due to the state of my kitchen (and myself) only one picture was taken and please don’t try this at home.

  9. Hi Evelyn,
I just saw this. I love to make rum cake. I actually almost got fired once because I made a rum cake for work. I told my boss to beware of the bottom of the cake because that is where the sauce goes – the bottom. He apparently didn't listen and was walking around funny all day. He's a recovering alcoholic and hadn't had a cocktail in 17 years. Honestly, I would not have made that cake if I had known. Other than that incident, I make a mean rum cake. When you let yourself not cheat but enjoy a piece, try the dark rum. Much better. Save the light stuff for egg nog. Great joke, by the way.

    Sincerely,
    Karina
