How to have a Perfect Prime Rib:
At your local market, picking a well-marbled rib is not that hard, most cuts of prime rib are well-marbled and if seasoned and prepared properly they will turn out delicious. We always ask our butcher to cut the bone off the rib roast and then tie it back on. This way we get all the flavor of the bone-in rib roast but it makes carving so simple.

Prime Rib Rub Recipe:
Ingredients for the rub:
for a 3 pound Standing Rib Roast (allow for about 1/2 pound per person)
- 3 cloves garlic, minced
- 3 Tablespoons Cracked Black Pepper
- 2 Tablespoons Kosher Salt
- 3 Tablespoons Season Salt
- 1 Pinch of Brown Sugar
Equipment Needed:
- Small Mixing Bowl
- Large Roaster with Rack
- Meat Carving Knife
🥣 Recipe Tips
- Choose a High-Quality, Well-Marbled Cut: Select a prime rib with good marbling for maximum flavor and juiciness. Ask your butcher to cut the bone off and tie it back on, as suggested in the recipe, to retain the bone-in flavor while making carving easier. This step ensures a tender, flavorful roast with minimal hassle.
- Apply the Rub Generously and Let It Rest: After combining the minced garlic, cracked black pepper, kosher salt, season salt, and pinch of brown sugar, rub the seasoning blend thoroughly over the entire surface of the roast. For even deeper flavor, apply the rub a few hours (or up to overnight) before cooking and let the roast sit in the refrigerator, allowing the flavors to penetrate the meat.
- Follow the Oven Door Rule Strictly: To achieve the perfect doneness, resist the urge to open the oven door after turning it off during the resting phase (up to 2 hours). This step is crucial for retaining heat and ensuring even cooking, resulting in a juicy, medium-rare or medium prime rib. Use a timer to stay on track and avoid peeking!

How to Cook a Perfect Prime Rib:
Instructions:
- Combine dry seasonings with the garlic in a small bowl. Blend well
- Rinse meat and pat dry
- Rub seasons into and all over meat generously
- Place in the large roaster with a rack. Do not cover or add water
- 3-5 hours before serving, place rib roast in a preheated 375-degree oven and bake for 1 hour (for medium rare) or 1 1/2 hours (for medium)
- Turn oven OFF but do NOT open the oven door. Roast may be in oven up to 2 hours and DO Not open oven door
- About 40 minutes before serving turn oven to 300 degrees, cook for 40 minutes
- Remove from oven and let rest prior to carving.

And with this prime rib recipe and especially the right Prime rib seasoning makes it easier than you would believe. We have made this recipe time and time again and it always works. And it’s great for all of your favorite holidays like Thanksgiving, Christmas, Valentine’s Day, New Year’s day or for a dinner party with your favorite friends.

Thanks SO much for your help Evelyn! The prime rib was sooooooo goooooood! Having the butcher cut the bone off and add it back on it a GREAT idea!
Haha, AGAIN my father-in-law would love this…my mother-in-law too, and you know, it's her birthday tomorrow (70th!), but since we're sick we're delaying dinner for them until the weekend…We were going to treat them to a place by their house, but maybe this would be the better alternative (so we can visit longer) and I bet hubby would love to cook it! I'mma check these things out and see… 🙂

Evelyn, Your prime rib recipe was amazing
I've never made prime rib. Ever. Was always too intimidated–wouldn't want to screw up such a lovely hunk o meat. But I think I could do this–although not opening the oven door would be a challenge for me. I'm a peeker! Like your tip about the bone. Makes sense!
This looks so yummy!
