Remember when Tupperware parties were all the rage and of course the old Tupperware popsicle maker was in about every home?     I remember my mom would let us make frozen popsicles with about every flavor/color of kool-aid. We ran around all summer with different color lips and tongues from these fun treats. We just about wore out those popsicle makers.

Today we are bringing back some of the fun and memories today with an adult version of those flavored popsicles. Summer brings to mind watermelon, sunshine, and fun and now boozy popsicles!! 🌞🍹 Boozy watermelon mojito popsicles are made with rum, watermelon, mint, and agave. , These adult-only treats are the perfect way to beat the summer heat. Plus, who said popsicles are just for kids.

Now that I am an adult, kool-aid popsicles are just not enough, I do like reliving these fun memories but with an extra kick. And since I don’t think one could think of summer and not also think of watermelon or hot sunny days, these watermelon mint popsicles bring all that together since they are the perfect treat for hot summer days.  These are super easy to make and it’s kinda fun to make up a batch or two of these and keep them in the freezer all summer long.

These watermelon mojito popsicles have the cool flavor of mint plus a bit of rum. This recipe makes eight (8) watermelon mojito popsicles using two watermelon slice molds . But if you don’t have one the mixture can be poured into other mold.

Frozen Watermelon popsicles

We also made these mini frozen watermelon shots using red solo plastic shot glasses  and swizzle sticks which was fun.  To get the stick to stay in the middle, cover each glass with foil or plastic wrap, insert a swizzle stick in the center and freeze.

Boozy Watermelon Mojito Popsicles Recipe:

rum, mint, agave and alcohol

Ingredients:

  • 2 cups of cubed watermelon
  • 3 ounces rum
  • 3 Tablespoons Agave
  • ½ teaspoon mint extract

How to make Mojito Watermelon Popsicles:

Pouring the mixture into molds

Place the watermelon cubes into your blender and puree.  Add the rum, agave, and mint extract and blend until smooth.   Pour the boozy watermelon mojito mixture into popsicle molds.  Place in freezer and freeze overnight or at least 12 hours.

🥣 Recipe Tips

  • Alcohol lowers the freezing point of liquids, so too much can prevent your popsicles from freezing solid and result in a slushy texture.
  • To minimize air bubbles in popsicles, fill the mold partially, tap gently, then finish filling.
  • Freeze the popsicles overnight for best results, as the freezing time can vary depending on the alcohol content and your freezer. 
  • Boozy popsicles will have a softer texture than non-alcoholic ones due to the alcohol.
  • Keep them in the freezer until you’re ready to eat them

Remove the mold from the freezer and turn the mold upside down.  Run hot water over the bottom of one popsicle while gently pulling on the stick until the boozy watermelon popsicle is removed.  Repeat for all the rest.  Enjoy.
