Oven Baked Breaded Zucchini Chips Roasted Recipe:
Ingredients:
- 2 medium zucchini sliced 1/4 inch thick (about 2 and 1/2 cups)
- 1/4 cup breadcrumbs
- 1/4 cup Parmesan cheese shredded
- 1/4 teaspoon seasoned salt
- 1/4 teaspoon garlic powder
- 1/8 teaspoon cayenne pepper
- 3 Tablespoons milk
- Cooking Spray
Equipment Needed:
- kitchen mandolin
- Mixing Bowl
- Sheet Pan
🥣 Recipe Tips
- Slice Zucchini Thinly and Uniformly: Use a mandoline or sharp knife to cut zucchini into 1/8-inch thick slices for even cooking and maximum crispiness. Consistent thickness ensures all chips bake evenly without some turning soggy or burning.
- Pat Zucchini Dry Before Coating: After slicing, pat the zucchini slices dry with paper towels to remove excess moisture. This helps the milk and breadcrumb-parmesan mixture adhere better and promotes a crispier texture during baking.
- Spread Evenly on the Baking Sheet: Arrange the coated zucchini slices in a single layer on the sheet pan without overlapping to ensure proper air circulation. This prevents steaming and helps achieve a golden, crunchy finish; consider baking in batches if needed.

These look so good, Evelyn. I've made a variation of this using strips instead of chips, but I'm definitely going to try the chips next time.
Looks like it could be addicting 😉 Next on my list, of course !
Yummy!! These sound so good – and what a great way to use zucchini this time of the year!
