🥣 Recipe Tips

  • Boost the flavor with a quick sear: Before adding the cans, brown the ground beef thoroughly and let the onions caramelize slightly—this deepens the savory base and makes every spoonful richer.
  • Drain the corn, keep the rest: Don’t drain the beans, tomatoes, or Rotel (their liquid adds flavor and body), but always drain the corn to prevent the soup from getting too watery.
  • Let it rest for max taste: After simmering, let the soup sit for 10 minutes off the heat. This allows the ranch and taco seasonings to fully meld, giving you bolder, more balanced flavor.

How to make this 7 Can Taco Soup

Ground beef, onions and garlic

Add ground beef, onion and minced garlic in a large dutch oven over medium high heat.

NOTE: We used our Ninja 4 in 1 cooking system that has a stove top function.  This is so we can brown the meat then switch to slow cooker to finish the recipe in one pot.  Our favorite slow cooker!!

browned ground beef

Cook and breakup the the ground beef until it is brown and the onions are translucent.  (Use either a spatula or a “ground beef breaker upper” to separate the ground beef as it browns).    Add salt and pepper to taste.

adding beans and corn

Add all 7 cans to ground beef, onion and garlic mixture.   Do not drain the tomatoes, beans and Rotel but drain the canned corn.

Adding ranch dressing mix and taco seasoning

Add the packages of taco seasoning and ranch dressing mix.

  1. This looks so delicious, Evelyn ! Wish RO TEL was available in South-Africa ! {will look for an alternative}

  2. I always have several cans of RoTel on hand!! I love RoTel! I can see why Michelle loves to make this Taco Soup – it's easy, hearty and uses RoTel! 🙂

  3. This is fantastic! Love that you don't have to do a lot of chopping for the tomatoes. Rotel sure comes in handy.

  4. I've eaten taco soup before, but it was bland. Your recipe, with the Rotel, Taco Seasoning and Ranch Salad Dressing mix sounds like it would have the "punch" I've been looking for. Thanks for the recipe! How many hopefuls does this usually make?
