Garlic Butter Dill Carrots Recipe:

  • 4 large carrots; peeled and quartered
  • 1 ½ tablespoons butter
  • 2 sprigs of dill
  • 2 tablespoons garlic; minced (may adjust to how much garlic you like)
  • 1 cup water

  • Adjust Garlic to Taste: The recipe calls for 2 tablespoons of minced garlic, but you can tailor this to your preference. For a milder flavor, reduce to 1 tablespoon, or for a bolder kick, add an extra teaspoon. Freshly minced garlic will provide the most vibrant flavor, so consider mincing it just before cooking.
  • Enhance with Fresh Dill: To maximize the dill’s bright, herbaceous notes, add a pinch of chopped fresh dill during the sauté step and reserve some for garnishing just before serving. This ensures a fresh, aromatic finish that complements the buttery carrots.
  • Control Carrot Texture: For firmer carrots, stick with the 6-minute pressure cook time. If you prefer them softer, extend to 8 minutes as suggested. To avoid overcooking, immediately release the pressure after cooking to stop the process and maintain the desired texture.

How to make garlic butter carrots in Instant Pot:

Place your steamer basket into your instant pot and pour in one cup water.  Place your peeled and quartered carrots into the steamer basket.

Put the lid on your instant pot and place valve to sealed position. Press the pressure cook button and set timer to 6 minutes.  But if you’d like them very tender go with 8 minutes.

Once the pot stops counting release the pressure and place the cooked carrots into a bowl.  Remove  the steamer basket and drain water.  Turn the instant pot to sauté mode and add the butter, garlic, and dill.

Place the cooked carrots back into the pot. Sauté for about two minutes and turn off the pot.
