There are as many variations of Mexican Food Recipes as one can try in a lifetime and we aim to continue to work our way through all of them. We are starting with our top 21 recipes and will be adding new ones as we eat our way through some of our favorite food.
Almost all our lives we have lived in the Southwest and we have sampled Mexican fare from South Texas to Southern California. There are so many ways to make a great plate of enchiladas. The Green Enchiladas of New Mexico is so very different than the Green Enchiladas of California. And also Tacos, we could go on forever with different ways to fill a taco.
We obviously don’t wait till Cinco de Mayo to enjoy a fiesta of Mexican flavors, it’s a weekly occurrence at our house. There is at least one meal a week that consists of spicy meat and grated cheese on a tortilla, it’s just part of our culture here on the Ranch.
